The best dumplings with cherries, strawberries, blueberries and other berries are made from kefir dough. They are also tasty with savory filling - you can't pull my pets by the ears.

How to make a dough for dumplings with cherries

Ingredients

  • 1 glass of kefir (200 g) of any fat content;
  • 0.5 tsp soda;
  • a pinch of salt;
  • 1 tbsp. l. Sahara;
  • flour - enough to knead a soft elastic dough.

For the filling - cherries and sugar or powdered sugar.

  • Pour kefir into a bowl, add salt, sugar and soda. Soda does not need to be quenched with vinegar. It will react with the lactic acid of kefir and fill the dough with tiny bubbles. This is the secret of his tenderness.
  • Stir well and add flour in small portions (I do it with a spoon) little by little, so that you don't get a tough dough. When it becomes difficult to knead with a spoon, knead with your hands on the table. It should turn out to be elastic and "go" slightly behind the hands.

Cover the finished dough with a bowl or wrap it loosely in foil so that it does not wind out. Leave it on for 20 minutes. The "rested" dough becomes softer and more tender. It's a pleasure to work with him.

In the meantime, prepare the berries:

  • go over;
  • wash;
  • dry on a linen towel;
  • remove the bones (you can use a device for removing the bones);
  • place in a strainer to drain the juice.

How to cook dumplings with cherries

While you were busy with the berries, the dough had time to rest - it's time to sculpt.

  • You can roll it out with sausage and cut it with a knife. Flatten each piece into a round cake 3-5 mm thick. Or roll out the dough with a rolling pin and cut out circles with a glass.
  • Place a couple of cherries in the center of the circle and sprinkle them with sugar or powder. The latter acts like starch - it slows down the secretion of juice and keeps it in the berry. The dumplings are juicier and don't flow.
  • Nicely connect the edges with "pigtails".

Steamed dumplings in a slow cooker

  • Pour water to half a bowl and place in a multicooker.
  • Set the Steam program for 25 minutes.
  • When the water boils, grease the steamer basket with vegetable oil and place the dumplings in it at a distance of 1-2 cm from each other.
  • Place them in the machine, cover and cook for 5-7 minutes.

Cooking dumplings in a multicooker is faster and more economical than on an electric stove. Due to less heat loss, it consumes much less energy than an electric stove.

  • While the dumplings are cooking, melt the butter. From contact with cold, they turn blue (although this does not spoil the taste).
  • Remove the finished ones from the basket and place in a bowl with melted butter. Cover immediately with a linen towel: steam will escape through the towel and the dumplings will not be chapped. Mmm, what an aroma ... Steamed dumplings on kefir smell in a special way!

You can not grease the dumplings and they will not stick together

Put the ready-made ones on cheesecloth, folded in several layers, and cover with a towel. The dumplings will cool and not sticky.

Dumplings with steamed cottage cheese

These dumplings have the most delicate, tasty dough and sweet filling.

You will need 1 glass of sour milk or kefir and 2 glasses of flour.

For filling

  • cottage cheese 350-400 g;
  • 1 tsp salt;
  • 1 tbsp sugar;
  • chicken egg yolk;
  • a pinch of vanilla sugar;
  • 1 tbsp. l. soda.

How to make dough for dumplings

  • Pour kefir into a bowl, add soda and salt. Stir. Sour milk extinguishes soda (bubbles appear), due to this, the dumplings will be fluffy.
  • Sift flour, it will be enriched with oxygen, it will become more airy.
  • Make a depression in a slide with flour and pour in kefir in parts, stirring continuously.

Conveniently knead in a kneading bag or food processor - quick and clean.

  • Sprinkle flour on the table, lay out a lump and knead. Dumpling dough likes to be kneaded well. Then it will turn out tight and elastic, will not stick either to the hands or to the surface. Add more flour if necessary, as it comes in different moisture levels.
  • Cover the bun with a napkin or tighten with cling film. Leave to rest for 20 minutes.

Take care of the filling - prepare the cottage cheese.

  • Add yolk, 1 tbsp. l. sugar and a few pinches of vanilla sugar for flavor.
  • Stir the mixture.

Don't put a lot of sugar in the curd; it will stick to your fingers. If the curd is watery, add 1 teaspoon of semolina to it. It absorbs whey, the dumplings will not crumble, they are juicy and tasty.

  • Roll out the dough into a sausage, cut into equal pieces and roll them out.
  • Spread the filling generously (1 teaspoon with a heap of cottage cheese) on the tortillas and sculpt the dumplings.

I spread the dumplings on a linen towel and cover on top. All excess moisture from the dough will be absorbed into the fabric.

How to cook dumplings in a double boiler

  • Turn on the steamer and set the timer for 20 minutes.
  • Grease a drip tray so that the dumplings do not stick to the wire rack.
  • When the water boils, lay out the dumplings, leaving space between them.
  • How much dumplings to cook? No longer than 7 minutes! Willingness is easy to tell by touch: they should be dry and not sticky.

Put them in a bowl, then drizzle with warm ghee and shake. After that, immediately cover with a linen towel to cool and not get chapped.

  • You will need water or whey 180 g;
  • Egg - 1 pc;
  • 1 tsp salt;
  • Flour 450 g for dough and 100 g flour for dusting.

Place the ingredients in the container of the bread maker, then place it in the chamber of the machine. Set the program for kneading the dough. It lasts 1.5 hours.

To understand if the dough is ripe, press or pinch it:

  • slides back - it means it is not yet ripe;
  • the fossa from the finger does not disappear - it is ready.

Mature dough is much easier to work with. It is elastic and keeps its shape well.

How to make delicious dumplings with potatoes

  • Peel potatoes, wash in running water.
  • Cut into wedges and place in a saucepan of cold water. Season with salt to taste.
  • Cook over medium heat for about 30 minutes.
  • Meanwhile, peel and finely chop the onion.
  • Fry over medium heat, stirring occasionally, until golden brown. It's so fragrant!
  • Drain the broth from the finished potatoes and puree with a pusher.
  • Transfer the puree to a bowl to cool down quickly. Add butter, ground pepper and fried onions.

Roll out the dough into a layer and squeeze out the blanks using a glass. When you make the blanks, you can start forming the dumplings.

  • Place 1 teaspoon of the filling in the center of the dough.
  • Bind the ends tightly. The dumpling is ready!

How to cook dumplings in a steamer or steamer

  • Bring water to a boil in a steamer or steamer pot. Thanks to the three-layer capsule bottom, the heat is distributed evenly in it. On the lower and upper tiers, the dumplings will cook equally well. The main thing is not to overexpose, otherwise the dough will be like rubber - hard and dark.
  • Grease the grids of the inserts with any odorless oil, then place the dumplings on them.
  • Cover and cook for 7 minutes.
  • Place fluffy dumplings in a bowl or saucepan with butter and shake several times in a circular motion.
