How the grill works

There are several types of grills:

  • on gas,
  • electric,
  • on charcoal:
    • with lid,
    • without cover.

You can prepare food in three ways.

1. Direct cooking method

Food is cooked for no longer than 30 minutes due to the fact that the high heat (280-290 ° C at the level of the grill grate) quickly forms a crispy crust in the meat, which prevents the juice from flowing out. The dish does not dry out: it languishes in its own juice, becomes juicy and tender. When the lid is closed, less oxygen is supplied to the coals, therefore the fat flowing onto them does not ignite and the food does not burn:

  • distribute the coals evenly and place the food above them on the grill grate;
  • close the cover. Open the vents and the One-Touch® air intake system;
  • halfway through the cooking time, turn the food once.

2. Indirect (indirect) cooking method

This method is convenient for baking whole poultry carcasses or large pieces of meat. Dishes are cooked from 30 minutes to 2-3 hours, soaked in a light smoke and languishing at a low temperature (110 ° C), which is reflected from the walls and grill lid and flows around the product - as in a Russian oven:

  • place food in the center of the wire rack;
  • Divide the hot coals into two parts and distribute along the edges of the device;
  • close the grill lid.
  • The indirect cooking method is similar to the smoking process, but the meat takes on a specific grill flavor.

3. Method 50/50

This cooking method combines the above two methods. Food is fried over coals for some time, then moved further away from the heat to bake:

  • place charcoal on only one half of the grill;
  • place pieces of meat over it;
  • when golden brown appears, move them to the “cold” zone.

How to grill meat

To make the meat juicy, pre-marinate it for at least 2 hours (preferably 8-10 hours) or grind the steaks with vegetable oil, salt and spices before cooking.

To make the meat tender, when grilling or grilling, try to turn it over only once. Leave gaps between the pieces on the wire rack to help it bake well and soak in the smoke.

How to grill fish:

  • marinate the gutted and peeled fish for 20-30 minutes, using a marinade of salt, pepper, vegetable oil (garlic and aromatic herbs to taste) - this will give a special aftertaste to the delicate texture of the meat;
  • put the pieces on a hot wire rack, greasing it with vegetable oil;
  • flip the fish more often to avoid burning. Determine the degree of browning by pressing your finger on the pulp (if ready, it bounces).

Fish, grilled in foil, turns out to be soft (as if steamed), but with a haze aroma.

How to grill / grill vegetables:

  • wash the vegetables, cut the stalks and dry them with a paper towel;
  • on a greased wire rack, place medium-sized portioned slices or carefully string them on a skewer so as not to lose fruit juice;
  • vegetables are not salted before cooking, since salt provokes the appearance of excess juice;
  • during cooking, to add flavor, lightly sprinkle vegetables with lemon juice, olive oil or water with crushed garlic (your choice);
  • cook until golden grating appears on the surface of the fruit.
